The Ultimate Burger From Scratch

For the Homemade brioche buns:

Brioche Bun

  • 3/4 cup warm milk (around 110°F or 43°C)
  • 3 tablespoons unsalted butter, melted
  • 3 tablespoons granulated sugar
  • 1 tablespoon active dry yeast
  • 3 cups all-purpose flour
  • 1/2 teaspoon salt
  • 3 large eggs
  • Egg wash (1 egg beaten with 1 tablespoon water), for brushing

1. Activate the Yeast:

  • In a bowl, combine warm milk and sugar. Stir until the sugar dissolves. Sprinkle the yeast over the milk mixture and let it sit for about 5-10 minutes, or until it becomes frothy.

2. Mix the Dough:

  • In a large mixing bowl, combine the flour and salt. Make a well in the center and add the melted butter and eggs. Pour in the activated yeast mixture. Mix until a dough forms.

3. Knead the Dough:

  • Turn the dough onto a floured surface and knead for about 8-10 minutes, or until the dough is smooth and elastic. You can also use a stand mixer with a dough hook for this step.

4. First Rise:

  • Place the dough in a greased bowl, cover it with a clean kitchen towel or plastic wrap, and let it rise in a warm place for 1-2 hours, or until it has doubled in size.

5. Shape the Buns:

  • Punch down the risen dough and turn it out onto a floured surface. Divide the dough into equal portions, shaping each into a ball. Place the balls on a parchment-lined baking sheet, leaving some space between them.

6. Second Rise:

  • Cover the shaped buns with a kitchen towel and let them rise for another 1-2 hours, or until they have doubled in size.

7. Preheat the Oven:

  • Preheat your oven to 375°F (190°C).

8. Brush with Egg Wash:

  • Beat an egg with a tablespoon of water to create an egg wash. Brush the tops of the buns with the egg wash for a shiny finish.

9. Bake:

  • Bake the buns in the preheated oven for 12-15 minutes, or until they are golden brown and sound hollow when tapped on the bottom.

10. Cool and Enjoy:

  • Allow the brioche buns to cool on a wire rack before slicing and using them for your favorite burgers or sandwiches.

1. Preheat the Griddle:

  • If you have a griddle or a flat-top surface, preheat it over medium-high heat.

2. Shape the Patties:

  • Divide the ground beef into equal portions and shape them into small, loose balls (about 2-3 ounces each).

3. Season the Patties:

  • Sprinkle salt and pepper on one side of each ball.

4. Smash the Patties:

  • Place the seasoned side of the ball on the hot griddle and use a spatula to smash it down firmly to create a thin patty. Season the other side with salt and pepper.

5. Cook the Patties:

  • Cook the patties for 1-2 minutes on each side, or until the edges are crispy and browned.

6. Add Cheese:

  • Place a slice of cheese on top of each patty during the last 30 seconds of cooking, allowing it to melt.

7. Toast the Buns:

  • While the patties are cooking, lightly butter the brioche buns and toast them on the griddle until golden brown.

8. Assemble the Burgers:

  • Spread your choice of condiments on the toasted buns (ketchup, mustard, mayonnaise).
  • Place a lettuce leaf on the bottom bun, followed by the smashed patty with melted cheese.
  • Add a slice of tomato and a couple of pickle slices.
  • Top with the other half of the bun.

9. Serve and Enjoy:

  • Your delicious smashed burgers are ready to be served! Enjoy them with your favorite side dishes.
