Dill Pickle Cashews


  • 2 cups raw cashews
  • 3 tablespoons dill pickle juice
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon dried dill
  • 1/4 teaspoon cayenne pepper (optional)
  • Salt to taste


  1. Preheat oven to 350°F (175°C).
  2. In a bowl, combine cashews, dill pickle juice, olive oil, garlic powder, onion powder, dried dill, cayenne pepper (if using), and salt. Toss until cashews are evenly coated.
  3. Spread the cashews in a single layer on a baking sheet lined with parchment paper.
  4. Bake for 15-20 minutes, stirring halfway through, until cashews are golden and fragrant.
  5. Allow to cool completely before serving.
