Mexican Rotel Dip With Pickles

  1. Ingredients:
  • 1 can (15 oz) Mexicorn, drained
  • 1 can (10 oz) Rotel Original Diced Tomatoes and Green Chilies, undrained
  • 1 package (8 oz) cream cheese, softened
  • 1 cup shredded cheddar cheese
  • 1/2 cup mayonnaise
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon cumin
  • 1/4 teaspoon cayenne pepper
  • 2 tablespoons chopped Pickles
  • Tortilla chips, for serving

Mexican Rotel Dip

Directions:

  1. In a medium-sized mixing bowl, combine Mexicorn, Rotel Original Diced Tomatoes and Green Chilies, softened cream cheese, shredded cheddar cheese, mayonnaise, garlic powder, onion powder, cumin, and cayenne pepper.
  2. Mix the ingredients thoroughly until well combined.
  3. If desired, fold in chopped fresh cilantro for an extra burst of flavor.
  4. Transfer the mixture to a serving bowl.
