Hot Mango Pickle

  1. Ingredients:

    • 4 cups raw mango, peeled and diced
    • 1/2 cup mustard seeds
    • 1/4 cup fenugreek seeds
    • 1 cup red chili powder
    • 1/2 cup turmeric powder
    • 1 cup salt
    • 1/4 cup asafoetida
    • 2 cups sesame oil
  2. Directions:

    1. Wash and thoroughly dry the diced mangoes. Ensure there’s no moisture to prevent spoilage.
    2. In a dry pan, roast mustard seeds and fenugreek seeds separately until aromatic. Grind them into a fine powder.
    3. In a large mixing bowl, combine the diced mangoes, mustard-fenugreek powder, red chili powder, turmeric powder, salt, and asafoetida.
    4. Heat sesame oil in a pan until it reaches smoking point. Allow it to cool slightly before pouring it over the mango mixture. Mix well.
    5. Transfer the pickle to a clean, dry jar. Let it marinate for at least a week before consuming for the flavors to meld.
